Kickshaws
Self-proclaimed as “Not your ordinary truckin’ food”, Kickshaws boasts an interesting and incredibly unique take on food trucks, and even on food in general. Owner and operator Seth Peterson has a background in biology, and came to Kauai to work as an organic farmer. During that time, he grew interested both in running his own business, and in how food relates to science. When he put these things together, Kickshaws was born, and now travels around the North shore of Kauai.
Science-Forward Food
Kickshaws is known for its original and intriguing menu options. Focused on molecular gastronomy, Seth uses scientific cooking techniques and flavor combinations to create gourmet diner food with a twist. The food truck is renowned for its 30-hour burgers, consisting of chuck and bacon. While they have a passion for carnivorous dishes, Kickshaws also provides a variety of vegetarian and gluten-free options, with a menu that rotates and is updated each week. This “mobile food lab” also allows customers to text to order, making it fast and easy to get these mouthwatering offerings into your mouth.
Family-Focused Fun
Not only is Kickshaws all about great food, but it’s also about having fun. Seth loves playing with flavor palates, as well as working with his family in the food truck. He is devoted to the importance of having a passion for what you do, and his dedication to enjoying his job and making it enjoyable for others only leads to a higher quality business. Through his decade-long experience as a farmer, Seth made relationships and connections that now provide Kickshaws with high-quality, fresh, local ingredients. According to him, you have to be unique in order to be successful. His avant-garde take on food is most certainly unique, and this creativity takes Kickshaws to the next level as a food truck in Kauai.
